COME QUICKLY, I AM TASTING THE STARS
Legend has it that the French monk Dom Pierre Perignon invented Champagne. He was having difficulty making still wine – bubbles kept appearing. On a whim, he tasted his “tainted” wine and was blow away.
“Come quickly! I am tasting the stars” – Perignon called out. And Champagne was born (or so the story goes). Though that lovely story has probably been embellished and evolved over the years, it is certainly a good enough reason to pop a bottle of Champagne in honour of Dom Pierre Perignon!
Attached is an article from Food & Wine with four suggested Champagnes to honour Perignon:
PS/ All four listed are wonderful but I am partial to the Piper-Heidsieck.
